Chip’s Homemade Vanilla Ice
This Ice Cream was a staple of our 4th of July’s and family gatherings. Everyone would take turns churning the ice cream. Chip is a true kitchen scientist. Her ability to understand flavors and the how to make them more subtle than brash, to me separates ordinary cooks from those with a real gift.
INGREDIENTS
- 4 eggs
- 2 1/2 cups Sugar
- 4 cups Whole Milk
- 1/2 tsp salt
- 3 cups Heavy Whipping Cream
- 3 Cups Half &Half
- 2 1/2 tbsp Vanilla
OR
2 tbsp Vanilla
2 tsp Almond Extract
Directions
- Beat eggs until light.
- Add sugar gradually, beating until mixture thickens.
- Add remaining ingredients; mix thoroughly.
- Freeze in ice cream freezer, by it’s instructions.
NOTES:
- Original Recipe has 6 cups Whole Milk and 4 cups Light Cream (1/2 & 1/2)
