Dad’s Winter Weather Chili

This thick and hearty Chili brings me back to cold winter nights at home with dad and family dinners. Served with hot dogs and your choice of toppings.. spaghetti, oyster crackers and of course, cheese! But for me, there was nothing better to eat this with than peanut butter & crackers. (: My dad found this recipe in a cookbook from our local newspaper. I’d suggest you read all about it and try it out yourself.

  • 2lbs Ground Beef
  • 1 Medium Onion, chopped
  • 3- 16oz. cans of Chili Beans
  • 16oz. can Red Kidney Beans
  • 6 oz can tomato paste
  • One Bottle V-8 Juice
  • 4 Tbsp Chili Powder
  • 2 tsp Garlic Powder

Directions

  1. Brown ground beef and onion together, drain grease.
  2. Add tomato paste and stir in Chili powder and garlic powder.
  3. Pour in V-8 juice and the beans and bring to a slight boil.
  4. Reduce heat and simmer for 1 & 1/2 hours, stirring often. Enjoy!
