Dad’s Bourbon Balls

 

 

Christmas time meant my dad making his famous bourbon balls. For those that like to indulge in the finer things.. this offers an intense, rich satisfaction. Of course for me, I liked them because I was too young to drink! haha Merry Christmas!!

 


INGREDIENTS

  • 1 cups chopped Pecans
  • 40ish Pecans, whole
  • 8 Tbsp Good Bourbon
  • 1 box Powdered Sugar
  • 1/2 Stick Butter, soft
  • 1 packet of Baker’s Semi Sweet Chocolate
  • 1×1 inch chunk of Paraffin

Directions

  1. Soak 1 cup of chopped Pecans in 8 tablespoons of good bourbon for several hours.
  2. In Bowl, add 1 box of Powered Sugar and 1/2 stick of soft butter until combined.
  3. Add the bourbon soaked nut and mix thoroughly.
  4. Form into very small balls and place them on cookie sheet lined with wax paper.
  5. Let them sit in the frig overnight.
  6. The next day, melt chocolate in double boiler with paraffin.
  7. Dip the candy balls- one at a time- in the chocolate and place on cookie sheet.
  8. Immediately place a full Pecan on top and press down to slightly flatten.

NOTES:

  • I realize that 8 tbsp = 1/2cup but there is something very meditative about adding it one tablespoon at a time. Like slow down, relax and enjoy the process. 
  • Use fork to hold candy and pour the chocolate mixture from a spoon over candy until entirely covered.
  • The first time I made this I melted a whole 1 inch block of paraffin into the chocolate. Not Good! lol Luckily, I could tell something wasn’t right so i threw it out and melted down some more chocolate. This time I cut a small 1 inch x 1 inch chunk off the paraffin block and everything turned out Great!
