Berl’s Macaroni Salad

 

 

This side dish is nothing short of terrific! But be careful, you can easily wind up eating so much, it becomes your entire meal.

 


INGREDIENTS

  • 2/3 box curly pasta
  • I medium tomato, diced
  • Cucumber, diced
  • 1/4 cup diced Onion
  • 2/3 cup Mayo
  • 1/2 cup diced Ham
  • salt & pepper to taste

Directions

  1. In pot, bring salt and water to boil.
  2. Add pasta and cook. (Berl says..no one likes mushy pasta. so do not over cook. ha)
  3. Drain pasta and set aside in colander to dry.
  4. Cut and remove seed from tomato, then dice.
  5. Slice cucumber in half longways and remove the center seedy soft area from both halves, then dice.
  6. In bowl, add the diced cucumbers, tomatoes, onions and ham and mix in Mayo.
  7. Add salt and pepper.
  8. Fold in dry pasta, combine well.
  9. If Macaroni salad is to wet at this point.. add more paste.
  10. Store in frig for 3-4 hours before serving.
